Culinary students and Kendall guests got to meet and eat with Chef Luis Fernando Perin on Monday, July 27. Chef Perin, who teaches Brazilian cookery, catering/parties and restaurant operations at Anhembi Morumbi University in São Paulo, is widely known for his extensive research on authentic Brazilian cuisine and is a consulting chef for Brazil’s TAM Airlines.
Chef Perin demonstrated how to make some authentic Brazilian national and regional dishes such as arroz de coco, bobó de camarão (shrimp in yuca cream), farofa de dendê (manioc meal in palm oil), bolinho de estudante (tapioca deep-fried cake). He also discussed classic and contemporary Brazilian foodways, including popular street food and the passionate people who prepare it.
Chef Perin was just one of the fantastic chefs presenting on European, Asian, and Latin cuisines for the attendees of the global cuisines workshop hosted at Kendall over the weekend by the Center for the Advancement of Food Education (CAFÉ).
